Chilaquiles
ingredients
for salsa verde:
- 3-5ish tomatillos (depending on size)
- 2 serranos
- 0-1 habaneros
- 4-7 garlic cloves
- 1/4 onion (i usually use yellow)
- some cilantro (1/5ish bunch?)
- a few cloves (optional)
- few tbsp broth (mushroom, no-chicken, chicken)
- msg
- salt
- mexican oregano (optional)
for chilaquiles:
- 6 tortillas (or old tortilla chips)
- 3 eggs (optional)
- 1/4 onion
- cilantro
- oaxacan cheese
- queso fresco
- crema
- avocado
- cooking oil

directions
make the salsa verde like one does (could see this salsa recipe for an example) -- feel free to play aroud w/ the ingredients or what you cook and what you don't. I cook all the veggies on the comal except a couple cloves of garlic, and usually blend in the onion/cilantro.
make tortilla chips (frying, air fryer) or use some you have (stale works great)
shred oaxacan cheese (however much or little you want)
dice onions or make strips, and cook in oil until translucent
in separate pan go ahead and cook the eggs how you want, mayhap w/ a bit of salsa verde
simultaneously cook the rest of the salsa verde for a bit w/ the onions, then add chips, oaxan cheese, cover for a lil bit to melt the top
if you wish, transfer to plate then top w/ eggs, queso fresco, avocado, crema, cilantro -- as little or much as you want
