Tomatillo Guajillo Salsa
ingredients (adjust peppers based on spice tolerance, remove seeds if you want even less spicy)
- 5-10ish tomatillos (depending on size)
- 3-6 serranos
- 0-2 habaneros
- 3-4 dried guajillo peppers
- 1/3 garlic head
- 1/4 onion (i usually use white)
- 2-3 cloves
- 1/2 bunch-ish cilantro
- 2-3 tsp maple syrup (or other sugar syrup)
- lil bit of oil
- few tbsp broth (mushroom, no-chicken, chicken)
- salt to taste
directions
either cook exclusively w/ comal or turn on oven
cook serranos, tomatillos, and optional habaneros on comal w/ a bit of oil till a bit charred. either cook on lower heat or put in oven until soft
rehydrate guajillos and warm up a bit of broth
peel garlic throw on comal for a lil
mash together garlic, guajillos, maple syrup, cloves, and some salt (go light, taste test at end to finish salting) till completely smooth -- add broth as needed to aid
mash in cooked habaneros, serranos, and tomatillos in that order and mash more or less chunky to preference
cut onions into strips then throw on the comal to toast a lil before cutting into small cubes
cut cilantro very finely, then fold cilantro and onion in with the rest of the stuff
finish with more salt if needed
