Vegan Chicken n Dumplings

ingredients

for soup

  • tofu curls (butler foods), or make seitan if you're fancy
  • 32 oz no chicken broth (imagine)
  • 2-6 tbsp white miso
  • 2-3 tbsp tahini
  • 1/2 bunch of parsley
  • fresh rosemary
  • fresh or dried thyme
  • dried basil (optional)
  • 2-3 bay leaves
  • pepper
  • 1/2 onion
  • 5-6 garlic bulbs
  • 1-2 shallots
  • 1-4 serrano
  • oil (seasame is my choice, avocado is more neutral)

for dumplings

  • 2/3 cup oat milk
  • 2 cup bisquick mix

directions

add like 6 cups of water to a big bowl and boil w/ 2/3 of broth

pour warm water n a bit of salt over tofu curls to let soak

chop onion, garlic, shallots how you wish -- there's no blending so pick a size you'd wanna eat in soup i guess

add a bit of oil, then cook the above down a bit in a big skillet

add remaining 1/3 of broth to the big skillet, the rest to a different larger pot

add tofu curls to skillet, along with a hefty bit of miso (your prerogative) and a few tbsp of tahini

add spices as desired to skillet (chopped v finely? or just leave like whole sprigs of rosemary n don't eat) n let the whole thing cook a bit/stir as one does

add some amount (at least 2 tbsp) of miso to the big pot, as well as quite a bit of salt n mix, maybe add a sprig of your rosemary

make dumplings by mixing milk b bisquick milk, don't over-mix!!

turn heat down to like low medium and plop dumplings in water, cook 10 min uncovered then 10 covered

combine everything in your skillet except maybe like big ole sprigs of rosemary
