Tabouleh
ingredients
- 2 bunches of curly parsley
- a bit of mint (like 10:1 with parsley? -- optional)
- 1 shallot
- 3-5 green onions
- 2-4 roma tomatos
- 0-5 persian cucumbers
- 1/4-3/4 cup fine bulgar wheat
- 2-3 limes, or lime juice
- 3-5 tbsp olive oil (a good one!!!)
notes
add less bulgar wheat if you want more of a salad, add more if you want a more filling side. the quantity is not too important, but i prefer less - lets the parsley shine. it's similar with the cucumbers, it's more filler - I add more when I want the dish to last me longer but you're sacrificing the delicious parsley taste.
directions
chop finely parsley -- don't include stems!! think cilantro in a salsa
combine lime juice, salt (go light) and water with fine bulgar wheat to lightly hydrate (either over stove, microwave or at room temp if you have time to kill) - don't over hydrate! the bulgar wheat will finish hydrating from the salad
chop green onions (whites and greens), shallots (very fine), and tomato (like for guacamole), and cucumbers (optional)
combine all your veggies
when chilled, add in your bulgar wheat and salt to taste
finish with your finest olive oil also to taste
