Tomatillo Sikil P'ak

ingredients (adjust habaneros based on spice tolerance)

  • 1 cup pepitas
  • ~6 oz tomatillos (like 3-5?)
  • 1-2 habaneros
  • 0-1 jalapeno
  • garlic (measure w your heart... maybe 2 cloves?)
  • 1ish shallot
  • 1/4 onion (i usually use white)
  • 2-3 cloves
  • 1/3 bunch-ish cilantro
  • lil bit of oil
  • 1 lime or juice
  • salt to taste

directions

soak pepitas the night prior in a salt brine, then dry... or skip this step

cook habeneros, tomatillos, and optional jalapeno on comal w/ a bit of oil till a bit charred. then cook on low heat, I sometimes put a lid thingy

at the same time, on a skillet cook your pepitas till golden

peel garlic, shallot, onion and throw on comal for a lil

remove seeds from peppers, or don't, I guess

mash pepitas first till smooth n powdery/sandy, then add everything else plus a bit of oil if you want

cut cilantro very finely, then fold like 2/3 of cilantro in

salt and add lime juice to taste

finish with a bit of olive oil if you have it, cilantro, n flaky salt if you're feeling rly fancy
