Nectarine Basil Salad

ingredients

for vinagrette

  • 1/3 cup olive oil
  • 2 tbsp champagne vinegar
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 2 nectarines
  • 1/2 tsp freshly ground pepper
  • 1/2 tsp paprika (sharp)
  • 1/2 tsp onion powder (or some fresh onion)
  • 1 tsp miso (optional)
  • salt to taste

for pickled tomatos

  • golden cherry tomates, halved (1/2 pound-ish?)
  • 1/2 purple onion
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 cup champagne vinegar
  • some fresh basil

for salad

  • 1 cup arugala
  • 1 cup fresh basil
  • 1 cucumber
  • 2 nectarines
  • some fresh mint

directions

blend the nectarines with the olive oil, vinegar, lime juice, honey, onion or powder, and (optional) miso.

add in the pepper, paprika, and salt to taste.

slice the tomatoes in half and the onion and basil into thin strips, and add to a jar or bowl with the honey, salt, vinegar.

let the tomatoes pickle for at least 30 minutes.

slice the cucumber and nectarines into thin slices.

add the arugula, basil, cucumber, nectarines, and mint to a bowl.

add the pickled tomatoes and onion, and drizzle the vinaigrette on top (or leave separate so folks can combine to taste).
