Mac n Cheese

ingredients

for sauce:

  • 4-7 big cloves
  • 1/2 onion
  • small shallot (optional)
  • 6 tbsp butter
  • 4 tbsp flour
  • 2-2.5 cups milk
  • 3/4 cup heavy cream
  • 1-2 tsp paprika
  • 1-2 tsp cayenne powder
  • ~ 2+ cup gouda cheese
  • ~ 1.5+ cup gruyere cheese
  • ~ 2+ cup cheddar cheese
  • 1 egg
  • 1.5 cups melty cheese blend (optional)
  • 1/2 cup panko breadcrumbs
  • fresh ground pepper (white or green preferred) to taste (optional)
  • salt

for pasta:

  • salt
  • 16 oz pasta

directions

mince or blend onion, then shallots and garlic, reserving 1/2 of garlic.

add butter to pan and turn on low/medium heat, add flour to prior pan. stir, and let flour cook ~5 minutes to create a kind of roux - let it slightly brown.

begin to boil water for pasta

add onions, garlic and such to pan and cook until translucent and you stop crying

add in spices except reserved garlic

add 1.5 cup milk + 1/2 cups heavy cream stir for a while till homogeneous

hopefully your water is boiling - add pasta, salt, and some oil if you partake of that religion

add 1 cup of cheddar, gouda, and gruyere, reserving the remaining for topping

add in the garlic set aside.

if the sauce is too thick add in up to another 1/2 cup milk

mix 1/2 cup milk and 1/4 cup cream with one egg

mix the noods with the egg milk mixture

combine the noods almost like lasagna - a layer of cheesy sauce at the bottom, then noods, then reserved cheese, then noods, then the remaining sauce

top w remaining cheese and panko, cook for like 15-20 mins or so at high heat

when it begins to appear golden, or if it has cooked for 20 minutes, turn the broiler on low for the last 1-3 minutes
