Lemon Cardamom Cake w/ Fig Jam and Matcha Buttercream

sooo this is actually 3 recipes but like

ingredients

for cake batter

  • 3 eggs
  • 1 extra egg yolk
  • 350g sugar
  • 500g flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 2 tsp salt
  • 3 lemons juiced + 1 more zested
  • 9 pods cardamom
  • 1/2 cup milk
  • 1 1/3 cup EVOO

for jam

  • 1/2 lb fresh figs
  • 2 tbsp honey
  • 1/4 lemon juice
  • 1/2 tsp vanilla
  • 3 cardamom pods
  • 1/4 cup water

for buttercream

  • 3 sticks of butter
  • 8 oz mascarpone cream
  • 1/4 cup heavy cream
  • 3 cups powdered sugar
  • 2.5 tbsp matcha
  • 1/4 tsp salt

directions

preheat oven 350 F
