Lemon Cardamom Cake w/ Fig Jam and Matcha Buttercream
sooo this is actually 3 recipes but like
ingredients
for cake batter
- 3 eggs
- 1 extra egg yolk
- 350g sugar 500g flour
- 2 tsp baking powder
- 2 tsp baking soda
- 2 tsp salt
- 3 lemons juiced + 1 more zested
- 9 pods cardamom
- 1/2 cup milk
- 1 1/3 cup EVOO
for jam
- 1/2 lb fresh figs
- 2 tbsp honey
- 1/4 lemon juice
- 1/2 tsp vanilla
- 3 cardamom pods
- 1/4 cup water
for buttercream
- 3 sticks of butter
- 8 oz mascarpone cream
- 1/4 cup heavy cream
- 3 cups powdered sugar
- 2.5 tbsp matcha
- 1/4 tsp salt

preheat oven 350 F
