Gazpacho

ingredients

  • tomatoes (1 heirloom, 2 roma, or 1 cup cherry)
  • 1 cucumber
  • 1 bell pepper, or mix w/ other sweet peppers
  • 1 small shallot
  • 1-3 cloves garlic
  • 1/4 cup olive oil (Lucini)
  • 2 tbsp champagne vinegar
  • 1/2 cup fresh basil (or skip)
  • 1/2 cup fresh parsley (or skip)
  • 1 tspn salt
  • 1 tspn black pepper
  • 1 handful of sourdough bread interior

notes

this is a good recipe to throw in your veggies that might go bad if not used soon...

directions

choppy chop everything and blend

ideally, chill 1 hour before serving

eat w/ sourdough, garnish w/ herbs and EVOO if you're fancy like
