Gazpacho
ingredients
- tomatoes (1 heirloom, 2 roma, or 1 cup cherry)
- 1 cucumber
- 1 bell pepper, or mix w/ other sweet peppers
- 1 small shallot
- 1-3 cloves garlic
- 1/4 cup olive oil (Lucini)
- 2 tbsp champagne vinegar
- 1/2 cup fresh basil (or skip)
- 1/2 cup fresh parsley (or skip)
- 1 tspn salt
- 1 tspn black pepper
- 1 handful of sourdough bread interior
notes
this is a good recipe to throw in your veggies that might go bad if not used soon...
directions
choppy chop everything and blend
ideally, chill 1 hour before serving
eat w/ sourdough, garnish w/ herbs and EVOO if you're fancy like
enjoy!!
