Flan

ik the ingredient lean more crème caramel less mexican flan but w/e i think it's good this way so

ingredients

for flan

  • 1 can sweetened condensed milk
  • 1 1/4 cups half n half
  • 4 oz crème fraîshe
  • 3 eggs + an extra yolk
  • 2 tsp vanilla
  • a bit of nutmeg
  • a lil salt

for caramel

  • 1 cup sugar
  • 1/4 cup water

notes

don't use a non-stick pan for the carmel, it will crystalize.

any off white sugar will make it a tad harder to tell when you're carmel is done. Just keep in mind if you use off-white sugar, you might have to baby your carmel a bit more.

directions

put 4 eggs un-cracked in a warm water bath -- it'll help the flan cook a tad quicker.

preheat oven 325 F. if you have the extra time, try 300 F.

in saucepan combine sugar/water, set low heat and mix a bit till combined. Once mostly combined, increase temp to medium - move pan around to further combined but don't stir for ~10 min or until the mixture is medium amber.

remove from heat and within 1-2 minutes pour caramel into flan tin.

blend all flan ingredients: half n half, condensed milk, crème fraîshe, eggs, vanilla, nutmeg, salt.

to reduce air bubbles run mixture through a fine sieve, and maybe give the flan tin a solid tap on the counter -- you can also scoop some bubbles off the top but the top will be the bottom and who's really checking that? if you're worried google how to reduce air bubbles.

put your flan tin into a larger tin with water about halfway up the tin -- if you're in a rush add less water.

if your flan tin doesn't have a cover, cover it w/ tin foil.

bake for like ~1.5-2.5 hours, checking frequently after an hour until internal temp reaches 175 F -- it should still jiggle but not look liquidy anywhere.
