Fennel Molasses Cookies

ingredients

for cookie dough

  • 35g molasses
  • 8 tbsp butter
  • 1 egg yolk
  • 150g sugar
  • 175g flour
  • 1 tsp baking powder
  • 1 tsp vanilla
  • a bit of nutmeg (.5 tsp)
  • fennel seed (2 tsp)
  • rosemary (1 small sprig, optional)
  • black tea (1 tsp, optional)
  • a lil salt

for sugar coating

  • 1 tbsp sugar
  • fennnel seed

directions

preheat oven 350 F

(optional) brown butter w/ rosemary and tea

mix sugar, eggs, vanilla, molasses together w/

crush fennel seed w/ mortar pestle or similar - w/ half what you want in the cookies and half in the set aside sugar

mix in dry ingredients w/ wooden spoon or stand mixer

let cool in fridge briefly (like 10 min)

scoop and roll in sugar mixture, then slightly (slightly!!) flatten on cookie sheet

cook 10-12 min
