Fennel Molasses Cookies

ingredients
for cookie dough
- 35g molasses
- 8 tbsp butter
- 1 egg yolk
- 150g sugar 175g flour
- 1 tsp baking powder
- 1 tsp vanilla
- a bit of nutmeg (.5 tsp) fennel seed (2 tsp)
- rosemary (1 small sprig, optional)
- black tea (1 tsp, optional)
- a lil salt
for sugar coating
- 1 tbsp sugar
- fennnel seed
directions
preheat oven 350 F
(optional) brown butter w/ rosemary and tea
mix sugar, eggs, vanilla, molasses together w/
crush fennel seed w/ mortar pestle or similar - w/ half what you want in the cookies and half in the set aside sugar
mix in dry ingredients w/ wooden spoon or stand mixer
let cool in fridge briefly (like 10 min)
scoop and roll in sugar mixture, then slightly (slightly!!) flatten on cookie sheet
cook 10-12 min
