Espagueti Verde

ingredients

  • linguine (gasp i know - look - i prefer it) or spaget, penne
  • 4ish poblanos
  • 1-3 tomatillos (depending on size)
  • 0-5 serranos
  • 1/2 onion
  • 1 shallot
  • garlic (the amount is between u and god)
  • 1.5ish cups mexican crema (can sub 1:1 crème fraîshe + heavy cream or milk)
  • 1 cup broth (no-chicken, mushroom, or chicken)
  • chihuahua cheese (optional)
  • nutmeg (optional)
  • salt to taste

directions

turn on oven

cook serranos, tomatillos, and onion on comal w/ a bit of oil till a bit charred; throw the poblanos in the oven

cut up shallot and garlic

take out poblanos and sweat them

combine the broth, tomatillos, serranos, onion, and shallots in the blender

boil water

peel the poblanos or don't if you're lazy, devein, de-seed n whatever then throw them in the blender too

throw all that in the saucepan, then add crema, garlic, and salt

throw your pasta in the water and cook sauce until pasta becomes al dente

save a bit of pasta water if it's cloudy, then add pasta, pasta water (optional), and cook for a tiny bit longer

add cheese (optional) and once it's melted in finish with nutmeg (also optional)
