Creamy Asparagus Soup
ingredients
- 1 bunch asparagus
- 1/2-3/4 yellow onion
- 10 garlic cloves
- sesame oil (or other oil)
- 3ish tbsp miso paste
- thyme (1/2 fresh bunch or like 2 tsp dried)
- rosemary (1/2 fresh bunch or like 2 tsp dried)
- 1/4 cup dry white wine (optional)
- 1-2 cups no chicken broth (imagine) or water + more miso
- 1/2 cup parsley
- 1-2 tsp fresh ginger
- 12 oz neutral coconut milk (Aroy-D) or other cream of choice (crema, half n half, crème fraîshe)
- 3 tbsp verde salsa (or sub for more lime)
- 1 lime
- 1 bay leaf
- salt
- msg
- pepper

makes like 4-5 servings, best served w/ bread
this is basically a twist on a recipe by nasim
directions
dice onion, asparagus, and garlic (no need to mince)
cook onion in oil until clear, then add miso paste and a splash of broth/water or dry white wine if you have it
add in thyme and rosemary (both optional, with thyme more important) and chopped asparagus (ends trimmed ofc) and cook a bit more
blend with remaining broth, coconut milk or cream, parsley, and ginger, altho save a bit of parsley for garnish
put the blended mixture back over stove and add bay leaf then salt, msg, pepper, lime to taste -- if you want save like 1/2 the lime to slice and serve w/ soup
put your bread in the oven!!! cook the soup for like 10-15 mins or until your bread is done and you're impatient.
person who gets the bay leaf has to do dishes :x
