Chocolate Chip Zuchinni Bread

  • 250 g flour
  • 6 tbsp cocoa powder - penzey's
  • 1.5 tsp baking soda
  • 0.5 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp fresh nutmeg
  • 1 tsp salt
  • 1 cup chocolate chips
  • 3 large eggs
  • 2 tsp vanilla
  • 8 oz creme fraiche
  • 1/3 cup EVOO
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 400g zucchini, lightly blotted

makes 2 loaves!!

my original recipe in undergrad has been lost to the elements, but this is a close reproduction.

i strongly recommend smaller chips, as they make the bread more enjoyable warm or cold

~that being said, i think the best way to eat later is wrapped in a lightly damp paper towl in the microwave for a few, or kept at room temp

directions

put 3 eggs uncracked in a warm water bath.

preheat oven 350 F

grate the zucchini, blot lightly w paper towels to remove excess moisture

mix your drys, minus the sugars (flour -> salt, then chocolate chips)

mix your sugars and your wets, minus the zucchini; after combined, fold in zucchini

slowly pour the drys into the wets

pour the drys into the wets, avoiding overmixing (gluten will make it tough)

pour into 2 butter greased loaf pan (i use 9x5)

bake for ~50-60 minutes, then let sit for ideally an hour (whomp whomp)
