Chickpea Kale Salad

ingredients

for salad:

  • 1 can chickpeas
  • pomegranate seeds
  • kale
  • olive oil
  • salt
  • za'atar / some sumac spice blend (Penzey's)

for dressing:

  • garlic (measure w your heart... maybe 3 cloves?)
  • 1 shallot
  • 4+ tbsp veg broth
  • 1/2 cup crema
  • 1/2 cup tahini (Al Wadi)
  • olive oil
  • lime juice
  • za'atar / some sumac spice blend (Penzey's)

directions

turn oven on high temp (like 425)

put chickpeas on a baking pan, don't overlap; add spice blend, salt, and drizzle olive oil

grill shallots n garlic on comal

blend with broth, then add crema, tahini in about equal parts (1/2 cup was an approximate hhhahh)

add za'atar and lime juice to taste, likely more/less lime depending on who's crema you use

too thick? add more broth

mix dressing w/ kale to taste, I go light so I can drizzle a lil on top for aesthetic

assuming chickpeas are toasty (~20 min?), throw em on the salad with your pomegranate seeds
